Whether you are on keto or not, this is the BEST Caesar salad you will ever eat! Seriously. It's one of my all-time favourite meals and this keto-friendly version (with low-carb croutons) tastes better than any I've ordered in a restaurant. And it's only 2.9 net carbs per serving!
This is a modified recipe (from my aunt Bev) that I have used for as long as I can remember. The best part? You don't have to scroll through my entire life story, pop-ups or videos to find the recipe!

INGREDIENTS
2 heads of romaine lettuce, washed and dried
1/2 freshly grated Parmesan cheese
1/2 cup Whisps
6 slices of bacon
1/2 cup extra-virgin olive oil
1/3 cup real mayonnaise
1 egg
1 clove of garlic
1/2 tsp dry mustard
salt & pepper to taste
HOW TO PREPARE
1. Cook bacon until crispy. Set aside to cool, then cut into small pieces.
2. Chop or tear romaine into bite-sized pieces and place in a large serving bowl.
3. Sprinkle with grated Parmesan cheese, several whisps and and bacon pieces. Whisps are crunchy Parmesan cheese crisps and make the most delicious alternative to croutons. I think they're even better because, when is more cheese ever not?
4. Put olive oil, mayonnaise, egg, garlic, salt, pepper and dry mustard into a small bowl. I use Hellman's Real Mayonnaise, which has zero carbs and sugar. Blend using as immersion blender. Drizzle over salad, toss and serve.
This makes a LOT of salad (as in enough for 8 servings) because we eat it as our meal. But you could prepare a smaller version and refrigerate the extra dressing to use the next day.
